Mounds Cake 

Brownie Ingredients:

2 cups sugar
1 1/2 cups sifted flour
1 cup butter
2-3 squares unsweetened chocolate
4 eggs, slightly beaten
1 tsp. baking powder
2 tsp. vanilla



Melt butter and chocolate over low head.  Add eggs, vanilla and sugar to the batter.  Then stir in baking powder and flour.  Remember to sift flour, otherwise brownies will be dense. 


Bake in a 9x13 pan at 350 degrees until center comes out clean with a toothpick.  Approximately 30-35 minutes. 


2nd Layer Ingredients:
Take 24 large marshmallows
3/4 cup sugar
3/4 whole milk
Melt marshmallows, sugar and milk in sauce pan
Add 14 oz package of coconut flakes 
Heat until good and hot then, spread on top of cooled brownie cake. 


3rd Layer:
Melt 12oz of semi-sweet chocolate chips in sauce pan with 1 stick of butter.  Pour melted mixture on top of brownie cake.



Allow mixture to cool, then place in freezer for approximately 25 minutes. Then remove and cut into bit size pieces and place into storage container.  These are easily removed and thawed when your ready to eat them.


Wait until kids go to bed, grab a glass of milk and ENJOY!!!

Zucchini & Carrot Muffins



These were so yummy.  My kids enjoy these in the morning before school and I will actually make a double batch and freeze the second one.  They freeze great!


Preheat oven to 375 and grease muffin cups or add muffin liner to muffin trays.  This is what you'll need plus a grater or food processor.

Ingredients:
1 1/2 c. flour
1 tbsp. baking powder
1 1/2 tsp. pumpkin pie spice
1/2 tsp. salt
2 eggs
1/2 c. brown sugar, packed
3/4 c. milk
1/4 c. canola oil
1/2 c. carrots, coarsely grated
1/2 c. zucchini, coarsely grated
3/4 c. raisins
1/2 c. walnuts, coarsely chopped

Combine flour, baking powder, pumpkin pie spice and salt in to a bowl.


In a separate bowl mix eggs and brown sugar until smooth.


Mix in milk and oil.


Combine wet & dry ingredients


Stir in carrots and zucchini and walnuts or raisins.


Mix together well.

Use a spoon or soup ladle to place mix into muffin tip.  I like to use an old fashioned ice cream scoop. Bake for approximately 15-19 minutes.


Let muffins cool on wire rack

Don't these look so yummy?  I prefer to warm them up and maybe add some preservatives.  My boys just like them slightly warm and Macgyver loves them right off the plate.
